PINEAPPLE UPSIDE-DOWN CAKE 
1/2 c. butter
1 can sliced pineapple
Pecan halves
3/4 c. brown sugar
Maraschino cherries

CAKE BATTER:

1 1/2 c. flour
1 1/2 tsp. baking powder
3/4 c. milk
1 egg
1 c. sugar
1/2 tsp. salt
1/3 c. shortening
1 tsp. vanilla

Preheat oven to 350 degrees. Melt butter in 10-inch cast iron skillet. Sprinkle sugar evenly over butter. Arrange pineapple, cherries, and pecans in skillet. Set aside.

Mix cake batter ingredients. Blend 1/2 minute. Beat 3 minutes. Pour over fruit. Bake in skillet for 35-45 minutes. Run knife along edge of cake and carefully invert onto platter.
