MEXICAN PORK CHOPS 
4-6 pork chops, approx. 1/2" thick
1 lg. green pepper, sliced
1 med. onion, sliced
1 (6 oz.) can tomato paste
1/2 tsp. cayenne pepper, optional
1/2 tsp. garlic, optional
1 c. plus 1 (6 oz.) can water
Salt & pepper to taste

Salt and pepper pork chops and brown in a large skillet or electric frying pan. Place a slice of onion and green pepper on each. Mix tomato paste and water, pour over chops. Simmer for 45 minutes or until tender. Serve over rice. Serves 4-6.
