MEXICAN CASSEROLE 
1 lb. ground beef
1 (4 oz.) can enchilada sauce
1 (8 oz.) can tomato sauce
1 sm. onion
1 can red beans
1 (8 oz.) pkg. corn chips
1 c. grated cheddar cheese
1 c. sour cream

Brown hamburger in a little oil. Add sauces, onion, red beans and 1/2 of the corn chips (lightly crushed) and 1/2 of the cheddar cheese. Pour into large casserole and bake 25 minutes at 350 degrees. Top with sour cream and edge with remaining corn chips. Sprinkle remaining cheese over top and return to oven for 10 minutes.
