CHILE RELLENO CASSEROLE 
1 lb. ground beef
1/2 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
2 (4 oz.) cans whole green chiles
1 1/2 c. cheddar cheese, grated
1 1/2 c. milk
1/4 c. flour
4 beaten eggs
Dash of Tabasco
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. cheese, grated for top

Brown ground beef and onion in a little oil; drain excess oil off. Add salt and pepper. Place half of chiles in bottom of 10 x 16 x 1 1/2 inch casserole dish. Add meat mixture, then cheese, then remaining chiles.

Combine last 6 ingredients to make batter. Beat until smooth. Pour over meat mixture and top with 1/2 cup cheese. Bake until knife comes out clean, 350 degrees for 45-50 minutes. Cool 5 minutes and cut into squares.
