BURRITOS 
2-3 lb. pork roast (most of fat trimmed off), cut into sm. pieces
1 sm. onion

Brown in 5 quart Dutch oven or similar heavy pan. Add:

1 can tomatoes & juice
1 can refried beans
Jalapeno peppers, diced (to taste)

Simmer about 1 hour. Mixture will be thick. If it gets too thick add a little water or tomato juice.

To Serve: Place mixture on flour tortillas and fold over. Place on plate, top with shredded lettuce, chopped tomatoes, shredded cheese and a little sour cream. Great if you like Mexican food.
