BANANA PUDDING FROM SCRATCH 
1 box of Nilla Vanilla Wafers
4 medium ripe bananas

CUSTARD:

1/2 cup sugar, divided
2 tbsp. all-purpose flour
1/4 tsp. salt
2 cups milk
4 eggs yolks
1 tbsp. vanilla extract

In saucepan, mix sugar, flour and salt; add milk slowly. Stir constantly over low heat until thickened. Stir and cook for about 15 minutes.

Beat egg yolks in bowl and stir into mixture slowly, stirring constantly. Cook about 5 more minutes stirring constantly. Remove from heat and add vanilla.

Line bottom of casserole dish with vanilla wafers, bananas (sliced) and custard mixture. Repeat layers, ending with custard on top.

MERINGUE TOPPING:

4 egg whites
1/4 cup sugar

Beat egg whites until stiff. Add sugar; whip until it peaks. Spread on top of custard and bake in 450°F oven for about 5 minutes or until browned. Remove from oven and serve.

My mom use to make it exactly like this except she used eagle brand milk instead of regular milk. It makes it richer. That's why I rated it 4 stars.

Wow! For such a simple recipe, this is awesome. The kids gobbled it up and the hubby couldn't stop saying that it was just like his grandmas. Fair warning though, the custard doesn't seem to thicken as obviously as other puddings that I have made. None the less, it seems thin when layering but it thickens as it cools.

I needed to make more custard after following this recipe. What made it thicken faster was to cook it as though you're making bechamel. Start with the milk first along with the salt and sugar, THEN once it begins to warm up, add flour little by little. Then the eggs and so forth.

I also suggest doubling the custard portion. This tastes like my Mamaw Cogdill's made from scratch recipe from 40 plus years ago. A-M-A-Z-I-N-G. Gave this as a housewarming gift and they loved it too. Try this one, you will be hooked!

I made this with a pie crust cooked pie crust first. I also added 2 smashed bananas into pudding the last 5 minutes along with egg yokes. After it cooled I added sliced bananas and whip cream to the top. It was a hit my son said it was the best. Its his favorite pie now Thanks!

I make mine about like this one but I don't separate the eggs. I mix them up and put them in the mixture along with the other ingredients while cooking the pudding and I leave the banana pudding with only the pudding on top or a few whole vanilla wafers on top of the pudding. Can be served with Cool Whip or just plain and it is best served warm after it sets for a little while. Cut down on the wafers and bananas and it will be more moist and soft.
