BOONE TAVERN CORNSTICKS 
1/2 c. flour
2 c. white cornmeal
1/2 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
2 c. buttermilk
2 eggs, well beaten
1/4 c. melted lard

Sift flour, cornmeal, salt, and baking powder into bowl. Add mixture of soda and buttermilk; mix well. Add eggs and lard, mixing well after each addition. Place greased cornstick pan in 450-500 degree oven until pan smokes. Pour batter into prepared pan. Bake at 450 degrees for 18 minutes or until brown. It is important to heat the greased pan before filing with batter to give cornsticks crisp outsides. Yields 12 cornsticks.
