CANDIED ORANGE RIND 
Strip rind from any number of oranges. Cover with water, weight down and place in refrigerator overnight. Scrape out all white, discard. Save water. Cover with more water, simmer 2 hours, drain. Add 2 cups sugar and FIRST water after boiling it down, cook 1 hour, drain off syrup. Spread and dry in 250 degree oven for 1 hour.
