CHINESE CHICKEN SALAD 
Skinless boneless chicken
Lettuce
Green cabbage
Carrots
Green onions
Bell peppers (green or red)
Bean sprouts
Cashew nuts
Rice threads
Water chestnuts (optional)
Dressing: Rice vinegar, sesame oil, soy sauce, salt, pepper, sugar, dry mustard, dry ginger

Boil chicken in lightly salted water. Shred lettuce, cabbage. Chop green onions and bell pepper. Dice water chestnuts. Toss together above ingredients with drained bean sprouts and cashews. Let chicken cool; shred and place aside.

In hot oil cook rice threads as directed on package. Drain and set aside. Mix dressing to taste. Toss all ingredients. Serve at room temperature. Refrigerate after serving.
