MOMMY'S CHICKEN STEW 
4 chicken cutlets (cubed)
8 carrots, sliced thin
2 lg. onions, chopped
1/2 yellow pepper, chopped
1 sm. zucchini, chopped
3 to 4 cloves garlic, chopped
About 15 mushrooms, sliced
About 15 sprigs fresh spinach (leaves ripped into small pieces)
Lemon pepper seasoning
Water
Rice

Pour about 1/2 inch of water into covered pot. Put on low flame. Add chicken and sprinkle generously with lemon pepper seasoning. Turn chicken and repeat. Add onions; let simmer covered about 10 minutes. Add carrots; let simmer covered about 7 minutes. Add garlic; simmer covered 3 to 5 minutes. Add zucchini, pepper, mushrooms, and spinach allowing each to simmer about 2 minutes before adding the next. Serve with juices over cooked rice.
