CHICKEN PAPRIKASH | |
1 lg. onion, diced fine 6 chicken breasts (5 skinned, deboned & cut into strips and 1 with bone in it for flavor) 4 tbsp. solid white Crisco 1/4 tsp. pepper 2 tbsp. salt 1 tbsp. paprika 2 c. warm water 1 pt. sour cream 1/2 qt. sweet cream or Half & Half In a fry pan, melt Crisco. Add onion, pepper, salt and paprika. Cook onions a few minutes, then add the chicken. Cook 5 minutes on each side. Add the water to the pan, let simmer until chicken is done. Remove chicken pieces from pan. Add sour cream and sweet cream. Add extra salt and pepper to taste. Cook until hot. Return chicken to pan. Can serve over cooked macaroni noodles or can add dumplings. DUMPLINGS: 4 eggs 1 1/2 c. warm water 1 tsp. salt Beat with wire whisk until fluffy. Add flour. It should resemble pancake batter. Fork should repel batter and it should not be sticky. Drop by teaspoonsful into boiling, salted water. When done, they will rise to top of water. Add to chicken mixture. |
