GINGER COOKIES 
1 1/2 c. butter
2 c. sugar
2 eggs
1/2 c. dark molasses or light molasses
4 c. flour
4 tsp. baking soda
2 tsp. ginger
2 tsp. cinnamon

Cream together butter and sugar. Add eggs and molasses. (I prefer dark molasses or 1/4 cup blackstrap molasses and 1/4 dark or light molasses for a richer flavor.)

Sift together flour, soda, ginger and cinnamon. Add to moist ingredients and mix well. Chill dough. Roll into 1 inch balls. Roll into granulated sugar. Bake on ungreased cookie sheet at 350 degrees F. for 10-12 minutes. Dough stores well in the refrigerator. Makes about 80 cookies.
