MID MORNING SOUFFLE 
8 slice of bread, cut into cubes
2 1/2 c. milk
4 eggs
1/2 lb. cheese (2 1/2 c.)
1/2 tsp. salt
1/2 dry mustard
Pepper to taste
Diced ortega chilies (optional)

Put bread cubes in greased 9 x 9 pan. Combine the milk, eggs, cheese and seasonings in a blender. Pour over the bread cubes and let stand over night in the refrigerator. Add the chilies on top if desired and bake at 325 degrees for 60 minutes. Cool slightly and cut in squares.
