MONTEREY JACK CHICKEN 
4 skinned chicken breasts
2 tbsp. butter
2 c. Monterey Jack cheese
1 c. bell pepper strips
1 c. onion strips
Rice, cooked
Salt & pepper to taste

Brown chicken breasts with butter in electric skillet. Saute bell pepper and onions and remove. When chicken is done, spread cheese on top and melt. Place on bed of rice and garnish with peppers and onions.
