ONION CORNBREAD 
1/4 c. butter
1 1/2 c. chopped onion
1 c. sour cream (8 oz.)
Dash salt
2 drops red pepper sauce
1 c. shredded sharp cheese
2 pkgs. sm. corn muffin mix
1/2 c. milk
1 can creamed corn
2 eggs beaten

Preheat oven 425 degrees. Grease pan. In medium skillet over medium heat, melt butter. Add onions; saute until tender, 10 minutes. Cool. Add sour cream, salt, 1/2 cup cheese; set aside.

Combine muffin mix, egg, milk, corn and sauce. Stir until smooth. Spread batter in pan. Pour onion mix over top. Sprinkle on cheese. Cook 30-35 minutes.
