CABBAGE - BEEF CASSEROLE 
1 can Rotel tomatoes
1 1/2 lbs. ground beef
1 lg. onion, chopped
1/2 bell pepper, chopped
2 ribs celery, chopped
1/2 c. raw rice
Salt and pepper to taste
1 head cabbage, sliced
1 (12 oz.) can V-8 juice (use more if you like the tomato taste)

Saute first 4 ingredients until meat is brown. Remove from heat; add rice, salt, and pepper. Layer sliced cabbage and meat mixture, beginning and ending with cabbage, in a 2 quart casserole. Pour V-8 juice over top. Cover and cook in 350 degree oven for 1 1/2 hours. Serves 8.
