MY FAVORITE BISCUIT OR PANCAKE

I like this mix because it's less expensive than the store-bought kind and keeps well in the cupboard. It stays fresh longer, though, if you store it in the refrigerator.

8 c. flour
1/3 c. baking powder
2 tsp. salt
8 tsp. sugar, optsp.
1 c. shortening

Mix together dry ingredients. With a pastry blender or 2 table knives, cut in shortening until the mixture resembles coarse meal. Store in airtight, covered containers. The mixture will keep for some time on a cupboard shelf or for months if stored in refrigerator. You may use this mix to make hot biscuits: (add 1/3 c. milk for every cup of mix); or for pancakes, waffles, dumplings, etc. Use as you would a purchased biscuit mix.
