HUMMINGBIRD CAKE 
3 c. flour
2 c. sugar
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 c. vegetable oil
3 eggs
1 1/2 tsp. vanilla
8 oz. can crushed pineapple, undrained
2 c. bananas, chopped
2 c. nuts, chopped (optional)

Sift flour, sugar, baking soda, salt, and cinnamon into large bowl. Add oil, eggs, vanilla, pineapple, banana, and nuts, and stir by hand until mixed. DO NOT OVERBEAT!

Pour into a greased and floured 10-inch tube pan and bake at 350 degrees for 1 hour 10 minute. Cool and frost with a cream cheese frosting.
