BRAN MUFFINS | |
5 tsp. baking soda 1 c. shortening or butter 4 eggs 5 c. flour 2 c. raisins or chopped dates 2 c. boiling water 2 c. sugar or 1 c. honey 1 qt. buttermilk 4 c. All Bran cereal 1 c. chopped nuts 1 tsp. salt Dissolve soda in boiling water. Cream shortening, sugar and honey, eggs and buttermilk together and add to soda and water. Combine all dry ingredients and add. Stir thoroughly until all ingredients are moist. Pour into greased (or teflon) muffin tin and bake at 375 degrees for 15-20 minutes. This is a large recipe and keeps well in refrigerator for up to 6 weeks if tightly covered. |
