SCALLOPED CARROTS 
4 c. sliced carrots, cooked in salted water
1 med. onion, chopped
3 tbsp. butter
1 can cream of celery soup
1/2 tsp. salt
Pepper to taste
1/2 c. diced cheddar cheese
1/2 can French fried onions

Drain carrots. Saute onions in butter. Combine with rest of ingredients. Top with French fried onions. Bake at 350 degrees until thoroughly heated and topping is brown, 20 to 30 minutes. Serves 6 to 8.
