BANANA CHIFFON CAKE 
2 1/4 c. cake flour
1 1/2 c. sugar
3 tsp. baking powder
1 tsp. salt
1/2 c. oil
5 egg yolks, unbeaten
1/3 c. cold water
1 tsp. vanilla
1 c. mashed bananas
1 c. egg white
1/2 tsp. cream of tartar

In large bowl, sift flour, sugar, powder and salt. Make a well in center of dry ingredients and add oil, egg yolks, cold water, vanilla and bananas. Beat until smooth.

In another large bowl, beat egg whites and cream of tartar until stiff peaks form. Gently fold banana mixture into egg whites until color is uniform. Pour into greased 10 inch tube pan.

Bake at 325 degrees for 50-60 minutes or until cake tests done. Remove from oven and invert over bottle neck until cool. Remove from pan and frost or sift confectioners' sugar over top. Cake is delicious just plain.
