LEG OF LAMB MARINATE | |
2 tsp. salt 2 cloves garlic 1 tsp. oregano 1 tsp. thyme 1 tsp. paprika 1/2 tsp. pepper 1/3 c. salad oil 2 tsp. lemon juice Mash salt and garlic together. Add other ingredients. Rub on lamb. Let stand 1 hour before cooking. Roast meat at 325 degrees. A guide for a whole leg 5-9 pounds is approximately 2 1/2 to 3 3/4 hours, so that the internal temperature is 160 degrees. |
