BEEF CASSEROLE 
1 lg. onion
3 stalks celery
1 green pepper
2 c. cubed leftover beef roast
1 can mushroom soup
1 can chow mein noodles
1/2 c. water
2 tbsp. butter
Salt and pepper

Start oven at 325 degrees. Cut onion, celery and green pepper coarsely. Chop beef in small cubes. Saute beef in 1 tablespoon butter for several minutes and transfer to medium casserole.

Put remaining butter in pan, toss in chopped vegetables and cook until limp. Stir in soup, water, salt and pepper and mix with beef. Cover and bake 30 minutes. Remove cover. Sprinkle with noodles and bake 10 minutes longer. Serve over rice.
