RATATOUILLE 
2 tbsp. olive oil
1 lg. onion, sliced
1 clove garlic, minced
1 sm. eggplant, cubed
1 sm. zucchini, sliced
1 green pepper, cut in strips
2 tomatoes, peeled & diced
1 tsp. salt
1/4 tsp. pepper
1 tsp. dried bouquet garni seasoning
1 tsp. Italian seasoning

Heat oil in heavy 3-quart saucepan or Dutch oven. Saute onion and garlic lightly. Add eggplant, squash, green pepper, bouquet garni seasoning and Italian seasoning over tomatoes. Cover and simmer 30 minutes. Stir and simmer, uncovered, 10 minutes. Serve warm or chilled on Romaine or other lettuce. Makes 5 to 6 servings.
