PINE - DATE - DATE - NUT - PRIDE 
1 c. Del Monte brand pineapple juice
2 or 3 envelopes unflavored gelatin
1 can Del Monte crushed pineapple
5 tsp. lemon juice
3 tbsp. sugar
1 (8 oz.) pkg. cream cheese
1/4 tsp. grated lemon peel
Dash of salt
1 c. pitted dates, quartered cherries
1/3 c. broken nut meats

Soften gelatin in 1/2 cup of pineapple juice; dissolve over hot water. Mix with remaining pineapple juice, the crushed pineapple, lemon juice, and sugar. Arrange a few dates (maraschino cherries, if desired) in bottom of 1 quart mold. Cover with 1 cup of the pineapple mixture; chill until set. Blend grated peel, salt, and cream cheese; gradually add remaining pineapple mixture. Stir in dates and nuts. Pour into mold; chill until firm. Unmold; serve with sweetened whipped cream, if desired. Serves 10 or 12.
