PUMPKIN LOG 
3 eggs
2/3 c. pumpkin (canned)
1 c. sugar
1 tsp. baking soda
1/2 tsp. cinnamon
3/4 c. flour

Mix all together - pour in greased cookie sheet that has been wax lined. Sprinkle chopped walnuts over pumpkin (optional).

Bake at 375 degrees for 10-15 minutes in pre-heated oven. Turn out of pan onto sheet or waxed paper. Pull the waxed paper off gently. Sprinkle with 4X sugar. Roll up with waxed paper it is laying on and cool. Make filling while cooling.

FILLING:

2 tbsp. soft butter
8 oz. soft cream cheese
3/4 tsp. vanilla
1 c. powdered sugar

Mix with beater or blender.

Unroll log and spread filling on. Re-roll without waxed paper. Use paper to cover and chill 1 to 2 hours. Slice and serve.

P.S. Habit forming - can't stop with one slice.
