MICROWAVE CARROT CAKE 
1 1/2 c. sugar
1 c. oil
1 tsp. vanilla
3 eggs
1 1/2 c. flour
3/4 tsp. salt
1 1/4 tsp. baking soda
2 1/2 tsp. cinnamon
2 1/4 c. grated carrots
1/2 c. nuts

Mix sugar, oil, and vanilla. Add eggs and beat well. Add flour, salt, baking soda, and cinnamon. Add carrots and nuts. Pour into 12 x 8 x 2 inch well greased dish. Microwave high 13-15 minutes. Rotate 1/2 turn every 4 minutes. Let stand on board until cool.

Since microwave ovens vary in power, you may need to adjust your cooking time.
