LIGHT AND LEMONY FOAM PUDDING | |
1 tbsp. unflavored gelatin 1 tbsp. cold water 1/2 c. sugar 1 c. boiling water 1/2 c. cold water 1/4 tsp. lemon juice 1/2 c. nonfat dry milk 1/2 c. ice water 1 tsp. grated lemon rind Soften gelatin in 1 tablespoon cold water. Add boiling water to dissolve. Add sugar, 1/2 cup of cold water, lemon juice and rind. Then chill until very thick, about 90 minutes. Chill a deep mixing bowl and beaters. Add dry milk, ice water and 1/4 teaspoon lemon juice to bowl. Beat until fluffy then chill. Break up lemon mixture with fork and add to whipped milk mixture. Beat well with electric mixer until pudding is fluffy but not too soft. Chill until firm. Serves 6. 90 calories per serving. |
