BASIC CHEESE SAUCE 
2 c. low-fat cottage cheese
2 tbsp. lemon juice
1/4 c. skim milk

Blend all ingredients until creamy. Adjust milk amount to produce desired consistency. Approximately 10 calories per tablespoon.

For variation - Add 2 tablespoons crumbled Bleu cheese and 1/4 cup Worcestershire sauce to blended sauce. Refrigerate for few hours or overnight. Approximately 15 calories per tablespoon.
