BASIC CHEESE SAUCE | |
2 tbsp. reduced calorie butter 2 tbsp. all purpose flour 1 c. skim milk 2 slices low fat process American cheese, torn into sm. pieces 1/4 tsp. salt 1/8 tsp. white pepper Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth (mixture will be dry). Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly with a wire whisk, until thickened and bubbly. Add cheese, salt and pepper; stir until cheese melts. Serve sauce over broccoli or other vegetables. Yield: 1 cup, about 20 calories per tablespoon. NOTE: One tablespoon regular butter may be substituted for 2 tablespoons reduced calorie butter. The flour and butter mixture will be dry. |
