EGGPLANT PATTIES 
1 eggplant, cooked, drained & mashed
An equal amount chopped, browned onion
5 eggs, unbeaten
1/4 tsp. McKay's chicken seasoning
1/8 tsp. sage
1 section pkg. saltine crackers, crumbled

Mix and make into patties. Fry in oil.

VARIATIONS: Add mushrooms or chopped nuts. Cover with brown gravy. Cover with sweet and sour sauce for oriental patties.
