QUAKER OLD - FASHIONED OATMEAL
CAKE
 
3 1/2 c. Quaker Oats (quick or old fashioned)
1 qt. plus 1/3 c. boiling water
1 qt. plus 1 1/4 c. flour
1 tbsp. plus 1/2 tbsp. baking soda
2 1/2 tsp. cinnamon
1 3/4 tsp. salt
1 tsp. nutmeg
1 3/4 c. butter
3 1/2 c. sugar
3 1/2 c. brown sugar, packed

Pour water over oats. Let stand until cool. Combine ingredients. Mix butter on medium speed until blended. Scrape bowl; mix on medium speed for 2 minutes. Add cooled oatmeal. Mix on medium speed until blended. Gradually add dry ingredients; mix on low speed until blended. Pour batter into greased 18 x 26 inch sheet pan. Bake at 350 degrees for 40 to 45 minutes. Cool and frost. Cut 6 x 10.

FROSTING:

2 1/2 c. brown sugar, packed
2 1/2 c. coconut
1 1/4 c. chopped walnuts
1 c. soft butter
3/4 c. milk

Combine ingredients; spread mixture over cake and broil until just bubbly. Yield: 60 servings.
