CHICKEN GENOA 
2 whole chicken breasts, skinned, boned & flattened
1/2 c. grated Parmesan cheese
3/4 c. seasoned Italian bread crumbs
2 eggs, beaten
1/2 c. vegetable or olive oil
1/2 c. white wine
8 oz. mushrooms
Mozzarella cheese, shredded

In three separate bowls, place cheese, eggs and bread crumbs. Press chicken into cheese on both sides then into egg and then bread crumbs. Heat oil in fry pan (medium heat) and brown cutlets. Remove and place in baking pan. In a clean frying pan, pour white wine and mushrooms and saute for 5 minutes. Place Mozzarella cheese on cutlets and spoon mushroom/wine mixture over the top. Bake at 325 degrees covered with foil for 30 minutes. Garnish with lemon slices and parsley (optional). Yield: 4 servings.
