CHIFFON CAKE 
2 c. flour
1 c. sugar
1 tbsp. baking powder
1/2 tsp. salt
1/2 c. Canola oil
3 to 5 egg yolks
3/4 c. water
1/2 tsp. flavoring (lemon or orange)
Grated rind from one orange or lemon (optional)
1 c. egg whites
1/2 tsp. cream of tartar

Beat egg whites until foamy, add cream of tartar, beat until very stiff. In separate bowl, sift dry ingredients - add yolks, flavoring, oil, water - beat until smooth, with grated rind, fold into whites. Bake in 10 inch tube pan 1 hour at 325 degrees. Invert over funnel until cool.
