LEMON-ZUCCHINI MUFFINS 
2 c. flour
1/2 c. sugar
1 tbsp. baking powder
1 tbsp. grated lemon peel
1/2 tsp. nutmeg
1/2 c. sunflower seeds
1/2 c. golden raisins
2 eggs
1/2 c. milk
1/3 c. oil
1 c. shredded zucchini (leave peel on when shredding)

In a small bowl beat lightly eggs, milk and oil. Add to all ingredients above. Then fold in the shredded zucchini. Grease muffin tins well. Add large tbsp. to each muffin shape. Makes 12 muffins. Bake 375 at degrees for 20 minutes. Serve hot or they keep well and can be reheated.
