BABKA 
1/2 c. soft butter
1/2 c. sugar
4 egg yolks
1 c. milk, scalded
1 yeast cake
Grated rind of 1 lemon
1/4 c. water, lukewarm
4 c. flour
1 tsp. salt
1 tsp. cinnamon
2 tbsp. water
1/2 c. raisins

Mix butter and sugar in a large bowl. Add salt to egg yolks and beat until thick. Add to sugar mixture. Soften yeast in 1/2 cup lukewarm water. Add to sugar mixture. Add cinnamon and lemon rind. Alternately add flour and milk. Beat well to make a smooth batter. Add raisins and knead with hands until batter leaves the fingers.

Let rise in a warm place until double in bulk about 1 1/2 hours. Punch down and let rise again until double in bulk. Grease pan generously. Sprinkle with fine bread crumbs and fill with dough. Brush with one egg yolk, beaten in 2 tablespoons of water. Let rise and bake in oven at 350 degrees for 30 minutes.
