KATHERINE'S CARROT CAKE 
2 c. flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
2 c. sugar
1 1/2 c. Crisco oil
3 c. grated (fine) carrots
4 eggs
1/2 c. chopped nuts

Beat eggs and oil and add dry ingredients. Add carrots and nuts. Bake at 350 degrees for 50 minutes.

FROSTING:

8 oz. cream cheese
3/4 stick butter
1 lb. box powdered sugar
2 tsp. vanilla

Use 1/2 of frosting recipe for a loaf cake.
