ZUCCHINI CASSEROLE 
3 sm. zucchini, grated
3 eggs
1 onion, chopped
1/4 c. chopped parsley
1/2 c. Feta cheese
1/2 c. grated mild cheese
1/2 c. flour
Pinch of salt
4 tbsp. butter or oil
Pinch cayenne pepper

Mix zucchini, eggs, onion, parsley and cheeses. Add flour slowly, mixing well. Season with salt and cayenne pepper. Grease 9 inch baking pan with 1 tablespoon butter.

Pour zucchini in pan. Dot with remaining butter. Bake 45 minutes at 350 degrees until well browned. Cut into squares. Serve hot or cold. 6 to 8 servings.
