SANTA FE CHALUPAS | |
1 lb. lean ground beef, pork or turkey 1 can kidney beans 1 can Old El Paso chopped chili 1 onion, chopped 1 bell pepper, chopped 2 Jalapenos, seeded and chopped 1 tsp. cloves 1 tsp. cumin 1 tsp. black pepper 2 tsp. sea salt 1/2 c. sugar Peanut oil Raw corn tortillas In large skillet, sauté all raw vegetables in oil. Add the meat and spice to the pot and stir until meat browns. Add remaining ingredients and simmer for 1/2 hour. If mixture is too thick, add 2 teaspoons flour dissolved in a cup of water. Fry tortillas until brown in enough oil to cover. Drain tortillas. Spoon mixture over tortilla and sprinkle on graded cheese and chopped tomatoes. |
