OATMEAL WHEATCAKES 
1/2 c. sifted all purpose flour
1/2 c. stirred whole wheat flour
1 tsp. baking soda
2 c. buttermilk
2 eggs
3 tbsp. vegetable oil
2 tsp. baking powder
1/2 tsp. salt
1 c. quick cooking oats
3 tbsp. packed brown sugar

On a sheet of waxed paper, mix together first 5 ingredients. In a bowl with wire whisk, beat buttermilk, oats, eggs, brown sugar and oil until well blended. Add dry ingredients; beat until moistened. (Batter will be slightly lumpy.) Using 1/4 cup batter for each pancake, pour batter onto lightly greased hot griddle. Bake until edges of pancakes look dry. Turn and bake until undersides are golden brown. Makes about 16 pancakes.
