SUGAR AND SPICE NUTS 
1/2 c. butter
2 lg. egg whites at room temp.
1 c. sugar
1 tbsp. ground cinnamon
1/2 tsp. salt (if nuts are unsalted)
5 c. mixed nuts (peanuts, almond, pecans, walnuts, etc.)

Heat oven to 325 degrees. Melt butter in the oven in a large roaster or jelly roll pan. In a large bowl, with an electric mixer beat egg whites until foamy. Gradually beat in sugar until stiff peaks form. Beat in cinnamon and salt. Fold in nuts.

Spread nut mixture over melted butter in pan. Bake 30-45 minutes, stirring 3-4 times to keep nuts separated. Transfer nuts to brown paper or paper towel to cool completely. Store nuts in jars or tins.
