APPLE CARROT CAKE | |
1 3/4 c. sugar 1 c. oil 3 eggs 2 c. flour 2 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 2 tsp. cinnamon 1 tsp. nutmeg 1 tsp. vanilla 1 c. grated carrots 1 c. peeled, chopped apples 1 c. coconut 3/4 c. chopped nuts 1 (8 oz.) can crushed pineapple, undrained Mix together sugar, oil and eggs. Mix together all dry ingredients and add to sugar mixture. Stir in fruits and nuts. Pour into greased and floured 9 x 13 inch pan and bake at 350 degrees for about 45 minutes. Frost with cream cheese icing. Refrigerate 24 hours before cutting. |
