CANADIAN BUTTER TARTS 
Fill tart pan or muffin tin compartments with your favorite pie pastry recipe.

FILLING:

1 egg
1/2 c. brown sugar
1/2 c. raisins
1 tbsp. melted butter
1/2 tsp. vanilla
1/4 tsp. lemon extract, optional
1/8 tsp. salt
Chopped walnuts, optional

Beat egg, gradually add brown sugar, salt and extracts, beating until bubbly. Add raisins and butter. Drop into pastry lined shell. Bake until filling is set, 12-15 minutes at 400 degrees. This will fill 6- 8 tarts. Recipe is easily doubled, tripled, etc.
