OATMEAL - CHOCOLATE SANDWICHES 
1 1/2 c. butter, softened
1 c. sugar
1/4 c. orange-flavored liqueur or orange juice
3 c. oats (quick or old-fashioned), uncooked
2 c. flour
1 (12 oz.) semi-sweet chocolate morsels
2 tbsp. vegetable shortening

Preheat oven to 350 degrees. Beat butter and sugar until fluffy. Blend in liqueur. Add oats and flour, mixing well; refrigerate 10 minutes. Shape into 1-inch balls. Place on ungreased cookie sheet; press into 2-inch circles. Bake 10 to 12 minutes or until edges are light golden brown. Cool completely. Combine chocolate and shortening in microwave-safe bowl. Microwave on high 1 minute; stir. Microwave 1 minute longer. Stir until smooth. Spread 2 teaspoons chocolate on flat side of cookies. Top with remaining cookies. Refrigerate 10 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
