MOM ALLO'S CHICKEN MOZZARELLA 
3 lb. boneless chicken breasts
3 eggs, beaten
Salt, pepper & garlic powder
1/2 c. Parmesan cheese
2 c. Italian bread crumbs
1 can mushroom soup
1 sm. pkg. mozzarella cheese, grated

Wash and dry chicken, cut into serving pieces. Combine beaten eggs, salt, pepper, garlic powder and 1/4 cup Parmesan cheese. Set aside. In another bowl, add remaining Parmesan to bread crumbs.

Dip chicken in egg mixture and coat with bread crumbs. Brown in oil and drain on paper towels.

Mix 1 can mushroom soup and 1 can water in blender to remove lumps. Layer soup, chicken and grated mozzarella in baking pan. Repeat layers. Cover and bake at 350 degrees for approximately 1/2 hour.
