KEN'S SOUTHWEST CHICKEN SOUP 
2 lb. chicken breasts, cut into bite size (Swansons canned chicken is great for this)
2 quarts water
1 box Spanish rice
1 jar salsa (hot, medium or mild)
1 small can green chilies
shredded cheese

Add all ingredients in pot.

Note: If you use the Swansons canned chicken don't drain the juices from the can - just add juice and all into the pot.

Bring to a boil. Boil 3 minutes and reduce heat. Let simmer for 10 minutes.

Serve in bowl with some shredded cheese. Corn muffins go good with this too!
