MOM'S POLIGGTO SALAD 
6 med. potatoes
7 eggs, hard boiled & sliced
2 carrots, grated
1/4 c. onion, chopped
3 sweet pickles, chopped
1 1/2 c. mayonnaise
1 1/2 tsp. prepared mustard

Boil potatoes, drain and dice. Add carrots, onions and pickles. Mix mayonnaise and mustard. Pour dressing over mixture and mix; season to taste with salt and pepper. Add sliced eggs and toss gently. Save a few for garnish. Sprinkle with paprika if desired.
