MOM'S DEPRESSION SALAD 
6 med. potatoes, diced
1 c. rice, boiled & drained
6 pieces garlic, chopped
1 lg. onion, chopped
2 tbsp. chicken flavor seasoning (instant Steero)
1/2 cube butter
4 tbsp. shortening
3 tbsp. flour
Seasoning

In 6 quart pot add water and cook diced potatoes. Save water with potatoes. Cook and drain 1 cup rice. In large skillet melt 4 tablespoons shortening, when hot add 3 tablespoons flour and brown this real good. (Add more shortening or flour as you need.) When good and brown add onions, garlic and saute these. Add some potato water to this, stir well. Add to potatoes and water. Add rice, chicken seasoning, butter and cook a few minutes to blend. Can substitute can yellow beans (snap), use juice and all.
