LENTIL AND BROWN RICE SOUP 
1/2 c. lentils
1/4 c. brown rice
1 sm. can peeled tomato
1 leek, chopped
1 clove garlic, minced
1 parsnip, chopped
1 tsp. basil
1 bay leaf
1 c. water
1 c. low sodium beef broth
Pepper to taste

Add everything to pot. Bring to boil. Turn down heat. Simmer 40 minutes, stirring frequently. Makes 4 servings.
