ALSATIAN APPLE CAKE 
1 1/3 c. plain flour
2 tsp. baking powder
1/3 c. sugar
1 egg
Pinch of salt
1/2 c. butter (cold)

FILLING:

2 lb. apples, peeled & cored

GLAZE:

2 eggs
1/2 c. sugar
2 pkg. vanilla sugar
1/3 c. whipping cream
1/3 c. cold milk

Dough: Preheat oven to 350 degrees. Grease a 10 1/2 inch fluted or plain springform pan. Sift flour and baking powder onto pastry board. Make a well in center. Put sugar, egg and salt in well. Work a little flour into center mixture. Cut cold butter into small pieces over flour mixture. Work all ingredients together quickly to make a smooth dough. Chill slightly for easy rolling, about 30 minutes. Press or roll dough onto bottom and sides of prepared pan.

Filling: Peel and core apples. Cut into thin slices. Place attractively over dough. Bake on middle oven rack at 350 degrees for 20 minutes.

Glaze: Combine eggs, sugar, vanilla sugar, whipping cream and milk. Mix well. Pour evenly over cake. Bake on middle oven rack at 350 degrees for 20 minutes longer. Remove rim from pan immediately. Let cool.
